American Oak
In this month's Outturn, we explore the American bourbon cask and how it managed to change Scotch whisky forever.
Reshaped Forever
For centuries, Scotch whisky was matured in whatever casks were available: sherry casks, wine casks, rum casks, ale casks, and even fish-related containers were used historically. But in the 20th century, Scottish distillers began importing used bourbon casks from America. This transatlantic parntership would go on to reshape Scotch whisky forever. These bourbon casks were not only more durable and affordable than casks from Europe, they were less tannic, produced a softer mouthfeel, and provided a wonderful backbone of flavors that would perfectly complement the underlying Scottish spirit. Today, the vast majority of Scotch whisky is matured in American oak casks that previously held bourbon. Join us as we revisit this classic tale of whisky romance.
POPULAR FOR A REASON
• Glenmorangie is the first distillery credited with importing and deliberately using ex-bourbon casks dating back to the 1930's.
• Today, 90% of all Scotch whisky is aged in American oak casks that previously held bourbon.
• American white oak trees are often 70–100 years old before they're harvested for cooperage. Remember that next time you pour a "young" whisky.
• At the time of filling, bourbon barrels are often worth more than the spirit they're filled with.

Char, Baby
Fun fact: the char inside a bourbon barrel acts like a natural filter. It helps remove sulfur compounds and smooth the spirit.

More Balanced
Compared to sherry and other wine casks, many distillers believe bourbon casks allow more of the distillery character to remain visible. Instead of dominating the spirit, it often complements it with sweetness and texture. This is one reason ex-bourbon casks are often used for "classic" expressions of a distillery's house style.

More Approachable
American oak is typically less than European oak, producing softer mouthfeel, less astringency and character that is less drying. This can make a whisky feel more approachable, especially after long maturation.
